I freed up some drawer space by putting all of our snacks in a basket in the corner of our counter-top. We can access them easily and so can our guests.
We spent Saturday with friends at the park and then cooking a dinner together. They smoked a ten pound pork butt and we provided the side items. We chose a broccoli slaw, au gratin potatoes and a Greek salad.
For the broccoli slaw: I added store dressing, cider vinegar, lime juice, cilantro, sriracha and celery seed.
I bought a pound of Greek salad from our local deli and added two more tomatoes, one cucumber and some feta cheese.
I bought two boxes of au gratin potato mix and when it was done baking I added gruyere cheese, Parmesan cheese and bacon to the top of it and put it back in the oven until it started to brown on top.
All 3 sides only took me 35 minutes to prepare! More time for fun with friends 🙂
Sunday Funday was spent tidying up the garage and getting the golf cart ready for the warmer weather. We made some time for a couple of walks around the neighborhood, some hockey in the alley and a little family baseball game.
Spring Break is officially over, but there are fun times ahead. The sunshine has treated us well this weekend!
