This was a delicious, somewhat healthy dinner with very little effort involved. It was perfect for a busy weeknight.
The tortellini was cooked as the package instructed. While waiting for the water to boil, in a large skillet, heat 1 tbsp olive oil over medium-high heat. Add the onions. Cook until the onions are tender, 3 to 4 minutes. Add the zucchini and cook until the zucchini is almost tender, 4 to 5 minutes. Add salt and pepper, to taste. Stir in pesto sauce to taste and cook until the mixture is heated through. Toss with pasta before serving and add some fresh basil to the top.
