Mardi Gras | Breakfast for Dinner

Grilled andouille & cheese grit cakes cradle poached eggs, all covered with a crab and corn cream sauce

 

I followed Emeril’s recipe for my grit cakes and he also has a really good recipe for a corn crab sauce that I used to pour over top. I added some cayenne and some shredded cheddar cheese to his sauce and liked it a lot.
